Here’s a recipe for spicy hot wings and grilled asparagus cooked on a Primo Ceramic Grill:

Ingredients:

For the Hot Wings:

  • 2 lbs chicken wings, separated into drumettes and flats
  • 1/2 cup hot sauce (such as Frank’s RedHot)
  • 1/4 cup melted butter
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Blue cheese or ranch dressing for dipping

For the Grilled Asparagus:

  • 1 bunch asparagus, tough ends trimmed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: Lemon wedges for serving

Instructions:

Preparing the Hot Wings:

  • In a bowl, mix together hot sauce, melted butter, honey, garlic powder, onion powder, salt, and pepper to create the wing sauce. Adjust the amount of hot sauce to your desired level of spiciness.
  • Place the chicken wings in a large resealable plastic bag or a bowl. Pour about half of the wing sauce over the wings, reserving the rest for later. Seal the bag or cover the bowl and refrigerate for at least 1 hour, or overnight if possible, to marinate.

Preparing the Grill:

  • Prepare your Primo Ceramic Grill for indirect cooking. Preheat the grill to medium-high heat, around 375-400°F (190-200°C).

Grilling the Hot Wings:

  • Once the grill is hot, place the marinated chicken wings on the grill grate over indirect heat. Close the lid and grill for about 25-30 minutes, turning occasionally, or until the wings are cooked through and have crispy, golden-brown skin.
  • About halfway through cooking, baste the wings with the reserved wing sauce to add more flavor and heat.

Grilling the Asparagus:

  • While the wings are grilling, prepare the asparagus. Drizzle the asparagus spears with olive oil and season with salt and pepper to taste.
  • Place the asparagus directly on the grill grate over direct heat. Grill for about 5-7 minutes, turning occasionally, or until the asparagus is tender and slightly charred.
  • Once done, remove the asparagus from the grill and transfer to a serving platter.

Serving:

  • Arrange the grilled hot wings on a platter and serve with blue cheese or ranch dressing on the side for dipping.
  • Serve the grilled asparagus alongside the hot wings, garnished with lemon wedges if desired.
